PANEER OF HARYANA

In the hostel days  the quality of  food in the mess was always an issue. On Tuesday for Lunch and on on Saturday for dinner, they used to serve  Mutter Paneer. At that time Paneer was not known to me and I never liked  it's soft spongy  touch. Many of my friends however used to get delighted with that tasteless paneer and I used to wonder why they like those white cuboids.
5 years later when I shifted to Haryana in 1983 I came across Paneer again , but this time l found that the  paneer was of superb quality. There was sea change in the taste,texture and size of the paneer pieces compared to what they used to serve in the mess of IIT Powai . The main reason for this was I was in Haryana.
Haryana was well known for milk and milk related products including Paneer.There used to be more than 7 % of fat content in the milk of Murrah buffaloes  and one  was required to dilute that milk by mixing some water for easy digestion. No wonders ....when "paneer" was prepared from such a high quality milk it was bound to be different and better than what I experienced earlier.I have seen the preparation of Paneer at many places and entire 3 or 4 kg paneer used to get sold within 1 or 2 hours .
In the North India , particularly in Haryana Delhi and Punjab ,when they have to decide the menu for some party or get together  they will include at least  2 -3 items which will have Paneer as its main ingredient. In the winter season Mutter Paneer used to be my favorate dish and by default we used to order that whenever we used to dine outside.Paneer Tikka will be in the starter .....again by default.
Haryana is famous for buffaoes . No jokes ........Haryana Buffeloes of "Murrah" breed are indeed  world famous!  The entire Haryana has abundant milk and milk related products. I observed that the many  milkmen used to drive Rajdoot two wheeler with huge cans on both sides . When one used to enter Faridabad from Delhi there was gigantic  welcome  board of ESCORTS company describing Haryana as
"Haryana ...Janha dudh Dahi ka khana  aur Rajdoot pe Aana jaana" ........Time changes everything....... Over a period of time those milkmen prospered and now they distribute the  milk using large size 4 wheelers. The motor cycle unit of ESCORTS was sold to Yahma company who stopped producing Rajdoot motor cycles.The population has doubled and number of four wheelers on the road have gone up ten times.
I am told the demand for Paneer has increased so much that people have started producing poor quality paneer from artificial  milk .These days adulterated milk business is flourishing and milk is artificially produced to meet the ever increasing  demand of Paneer and other milk products .Around every festival time there is seizure of adulterated sweets and  milk products including Paneer.
In those days  the pollution was unknown to Haryana .Faridabad is today the worst city in the world if air  pollution is the yard stick. 
The quality of Paneer has now  detoriated  drastically in Faridabad because of water and air pollution.
After staying in Haryana for more than 30 years when I  returned to  Nagpur and  to my surprise I found quite good quality Paneer in Nagpur. The credit again  goes to the quality of milk.   I am sure "MURRAH " BUFALOES must have come here . One is however not sure whether the technic of producing adulterated milk has also come here or not . If not soon it will .
I think crimes and pollution follows the prosperity !

FALL IN LINE

FALL  IN   LINE 43 years back I attended one lecture of noted management expert and teacher , Professor Sharu Rangnekar and later  read his  one small and wonderful   book titled " In the wonderland of Indian Mangers".I honestly feel that no one has described  management style and work culture of  Indian Industries better than professor Rangnekar. Since then I have been a silent observer of the people I have met in various industries.
